  1. Marinate chicken with red chilli powder, salt, turmeric, coriander powder, lemon juice for about 30 mins to 1 hour.
  2. Prepare Chhetinad masala by dry roasting cinnamon, cardamom, pepper corn, cloves, star anise, mace, fennel seeds, cumin seeds, coriander seeds, red dry chilli, coconut. Cool a bit and grind to a powder.
  3. Heat oil in a pan, add Bay leaf, green chilli, curry leaves, sliced onion, ginger garlic paste, chopped tomato. Cook till oil leaves pan sides.
  4. Then add the marinated chicken pieces, don't add any water as tomato and chicken both oozes out lot of water. Adjust salt.
  5. When chicken half done, add the prepared Chhetinad masala as per your taste, cook further few mins.
  6. Finally garnish with chopped coriander leaves and serve.
